I finally have a photo of this...one of our favorite meals! Great as is, however, I like it even better without the carrots (tastes just a little bit richer) :).

Thanks, Audrey! I know what you mean - I just got a pressure cooker and have been making lots of one-pot dishes (stews, risottos !!, etc.) and most of them do not look like they would photograph well...I can understand why there are no photos in the pressure cooker cookbooks I have :).
