Savory Cheese and Chive Bread - FFWD

This is our FFWD for this week. It is a quick bread made with chives and cheddar cheese. Compared to the fabulousness of the other AMFT/FFWD recipes, this one was unremarkable. When sliced, the texture was moist & had a soft crumb, however it tasted dry and was on the bland side. We couldn't taste the chives much (out of season?). I even added a little extra cayenne & used extra sharp cheddar. Maybe a little sugar might have given it a boost. It did taste better after it cooled all the way to room temperature. Dorie says this can be served with wine so maybe it is supposed to be mild in taste. If I wanted something like this again, I would just make a cornbread version for more flavor.

  4. Several people found it bland. Maybe had something to do with the chives, you think? Sometimes they can be pretty mild. Your pic looks great.

  5. Great shot of your results ! Nana and I were delighted at how easy this one was. Next week promised to be more involved :) I have seen alot of posts that offered similar recipes from other sites and the whole experience had left me anxious to try other savory quick breads and see if I can narrow down one to a "keeper" since I love the concept.

  7. First of all, your loaf looks great! It's just like the photo in the book. Sorry to hear you were disappointed in the flavor. I wouldn't give up on this recipe, though. Try it again with in-season chives or some of the add-ins Dorie suggested. You might find a combo that works for you.

  8. The photos are great! I am so glad I wasn't alone in my disappointment with this one. While a different blend of ingredients may have added more flavor, I agree it was dry.
