Creamy, Cheesy, Garlicky Rice with Spinach - FFWD

I missed last week's FFWD because we had no power, thanks to Hurricane Irene. This week's recipe made up for it - it was sooo good! And so easy, too. We loved it so much that I am making it again tonight. I have a lot of smallish bell peppers from our garden so instead of stuffing the rice into peppers, this time I am going to sauté the peppers along with the onions and garlic and add all that to the rice and cheese. Cannot wait!

  6. What a storm. Glad you have your power back, and I hope that's all the damage you sustained.
Your stuffed peppers look great. I did that with the leftovers. I love your idea of added chopped peppers to the rice. So good!

  7. Irene was such a mean lady... She is still making our lives miserable (along with Lee)
Glad you are back with the power.
The rice looks so pretty inside the pepper.

  9. Hopefully Irene didn't cause you any lasting damage. Your meal looks wonderful. I may have to try it with the peppers. It looks like it would be the perfect portion size for a luncheon.

  11. Your stuffed peppers look great. I like the idea of using several colours - so pretty. I'm glad you're back in action after Irene. So much devastation. It caused a lot of trouble in the Maritimes, too, even though it had been downgraded by then.
